I think this will be a memorable cruise for all or you...I have not done a canal cruise, but know there is so much to see as you go thru the canal. If you book a balcony they can see it at their pace, in the comfort of their cabin. I would also make sure to do excursions, like an island tour, where you can walk off the ship and get a tour bus, or maybe hire a cab just for the 4 of you..This will allow, doing things at your own pace, and if you need to make a pit stop, it's an easy thing to do with a personal driver.

For dinner, I would arrive a bit after the doors open, as to allow your parents no crowds or the occasional rush to get in..Aft pools are usually less crowded, as I have found.
