probably because it didn't come from alaska, had been frozen for some time, and thawed. like those wonderful pineapples you get on hawaii-bound ships; most likely from costa rica. true in lots of mainland restaurants located at beautiful shore places -- sad, but more money is made shipping this stuff all around than by getting it from locals. it is more 'romantic' to think the food came from the local bay, but that is often not the case.
