Hello, high seas! Welcome to CM's . I'm just going to comment on what I've highlighted in your post: and will be dining in the buffet instead of the pay as you enter restaraunts. You don't have to eat in the buffet or the "pay as you enter restaurants", you can eat in the MDR, the buffet, the Pizza Place, etc..

If you're not drinking alcohol, eating in the specialty restaurants, doing excursions, buying "stuff" onboard, you should be fine with a $500.00 cash deposit which you'll be asked for as you board.
