I was told by an Azamara Rep that seaching in this fashion (Azamara club cruises > shore excursions > advanced search) brings up all excursions from last year and that they left them loaded so that one could see what is usually offered. The ones that would be actually offered on my cruise are found by going under "manage my reservation". Also, when using your method of Shore excursions and download brochure, there are just as few to choose from as when looking under "manage my reservation". In fact, they forgot to include day 2 in Sorrento.
