What is practized normally and depends on the ships location is the Horizon Court is used for both embarking and disembarking passengers on the same day.
Since you will probably not get onboard until after noon you will be asked to go to the Horizon while the rooms are completed and you might find other passengers leaving up till 4-5pm (a lot of the Caribbean ports have air/cruise flights that arrive after 1-2pm and depart after 4pm ) which is why the double bit.
The MDR is certainly open for breakfast on the last day till about 11am but is most likley closed for preparation of that evening, depends on multiple duties of staff I guess.

By the time you get onboard and have wee bit to eat at the Horizon it will be time for lifeboat drill and early dining,
