Default Transatlantic Trip and Toddler ?

Does anyone have thoughts on or experience doing a transatlantic cruise from Europe to the US with a preschool age kid (hopefully to somewhere in Florida, cutting through the Caribbean).

We're starting to plan our first cruise, which includes bringing along our 3 y.o. We really wanted to see Barcelona and Greece, but for our late fall/early winter time frame (Nov to Dec) there don't seem to be that many options. So we looked at some transatlantic options as these are some of the latest dates sailing from Europe, and maybe we at least get to see Barcelona.

We realize that's a bit of a long trip and a lot of time at sea. We aren't sure there would be children's programs, or children in them at those times.

We looked briefly at Cunard because we liked the Victoria's route, but it seemed like there wasn't much to do together as a family, but there'd be fun cultured activities to do when we drop her off. Plus, it seemed like they had a surcharge for a third person, rather than a discount. It was almost cheaper to get 2 rooms. We just got the vibe that kids weren't really welcomed, and the whole atmosphere seemed maybe a little too refined for people who live casually.

The other two possibilities are Royal Caribbean and NCL, though I didn't like their routes quite as much. That might not matter, if the on-board experience itself really allows us to have some fun as a family, but gives us the ability to have some time alone too.

Are there some other cruise lines with good kids programs that we should consider?
