On one cruise, HAL offered what they called a "simple" dish. Supposedly a recipe based on various cultures' local cuisine. I ordered a lamb shank that had been cooked in white beans and then served over garlic mashed potatoes. Looked very bland, but the lamb fell off the bone and the seasonings made an awesome combination.
I also love Carnival's Basa. For those not familiar with it, basa is a type of fish and their chef won some kind of culinary award with this dish. Offered it the same night as the lobster/shrimp combo and I ordered both. Shared some of the basa with those who wanted a taste, but I preferred it to the lobster. A real first for me!
Okay, drooling now. Oh, and I also love Carnival's marinated salmon appetizer.
