Growing up in the Hudson Valley of NY it was all about the apples for dessert. Lots of apple orchards. Apple pie, using Macintosh apples was locally popular, and this is contrary to many recipes one can find. And please, no cheddar cheese with the pie. Either by itself or with vanilla ice cream.

My wife did not grow up in the Hudson Valley but she had a cousin who was Mayor of a town in the area and sent most of every summer there during her childhood .She knows the names of every apple that probably exists.
