I got this from the Princess web site. Sounds pretty interesting. I have to say, though, that even Carnival has started adding things like gator fritters, frog legs and other things to their menus. Anyway - this is how they describe the restaurant below:

Passengers are able to enjoy jazz music along with traditional Cajun and Creole-infused dishes in the very first New Orleans restaurant at sea, the Bayou Cafe. Dishes such as peel-and-eat shrimp, smothered gator ribs, seafood gumbo, chicken and chorizo jambalaya, and N'Awlins crawfish "mud bug" bisque make this a truly unique dining experience.
