We initially planned on being the third cruise of the Coral Princess...but due to the delays we were on the initial voyage on january 3rd. The ship had real problems with the stabilizers, even in calm waters the ship was very unstable.

Something tells me that "unstable" is the wrong word in this context. Stability is a measure of a ship's ability to right herself if she starts to rock. If the ship were unstable, she would have flipped over.

Do you mean that you felt a lot of motion? That's possible, especially if she has a stabilizer problem, but it's not due to instability.
