We've done our own research on the internet and booked our excursions before we leave. I wouldn't wait until I got into a port to book if there are specific things you wish to do. Maybe if you just want to tour the towns you can book after you arrive, but for things like helicopter ride to glacier, bear watching, etc, do it ASAP!
