My recommendations.

Juneau: The helicopter and dog sledding. Still gives time to take the tram to Mt. Roberts, ABSOLUTELY a fantastic view. The tram leaves every 30 minutes, you do not need to book it through the cruise line. Good hiking trails if your inclined. The ship docks almost right next door.
Red Dog Saloon for a fun time and very famous, a few blocks from where the ship is docked. Have a libation and fun.

We did the Mendenhal Glacier and were on top for around 45 minutes, gets cold so that time was enough and a good narrative of the glacier. Great adventure, especially if you have never been on a helicopter.

Ketchikan: Misty fiord's flight seeing. Then enjoy walking the town.

The items I mentioned are a once in a lifetime experience. You live only once, go for it.

Do the research, Alaska as the individual commented above, not a one time trip, but you can certainly make a good dent into the excursions.

We are going back to Alaska Sept 2006. Already know what excursions to book, the ones I mentioned .. a real ball.
