I don't think it will affect you, I'd just tell them she was supposed to meet you and something happened.

I was on the cruise in Feb., they do have several singles gatherings, just read your Capers. The maitre'D probably already assigned you to a singles table as well but if he didn't, you can always ask to move to another table.
