I think generally, if your ship returns to the same port it sailed from, ship time will stay at the time of your embarkation/debarkation city. For instance, if you sail from and back to Miami, ship time will always be Eastern Daylight Time. Mexico is still using the "old" calendar for changing to Daylight Saving Time, so even though the US is now on Daylight Time, Costa Maya would be on Central STANDARD TIME (for the next week).

But, don't worry about it--tell the tour operators what ship you're on and the time that Carnival posts as the arrival time, and they'll know.
