Being "flexible" means any ship, any sailing date, any port. Specifying a specific ship and a specific port and a specific date is NOT being flexible.
Last minute deals can exist; I bought my first cruise just a couple of days before sailing. However, with the recent security requirements, I think 48 hours in advance is the latest you can book.

I can't help you with Carnival; I am sure others will "pipe in" with recent info for Carnival.

Last minute deals do exist, but as Marc said, you have to be flexible in terms of time and ship in order to snatch up the best ones.
Right now you can get the Sensation, on May 8, for around $310 for an inside, $350 for an ocean view and $590 for a suite. There will be some additional tax added on to that but these prices include port charges. Not the cheapest pricing for a 3 day cruise.
You can purchase up to 48 hours before sailing on most ships.
Do some online pricing then call an agent to get the "best" price. I wouldn't wait much longer. If you do then you are at a much higher risk of the ship selling out. Cruise lines do not want to sail with empty cabins.
Take care,
Mike

Mike, as usual, has got it exactly correct. In the "Old Days" we would head for the port, luggage in hand, on the day of sailing, and do "standby" just like you can do with the airlines, but once again, because of security, that is no longer possible. At that time, if there were cabins left, they went for very, very good prices. Alas,,,,,another good thing gone,,,thanks to the world situation.
Keep in touch with a GOOD agent, who will keep his, or her finger on the pulse of the line, and get you the best possible price.
If you live near a port that works with cruiselines, that is great. I don't see any "bargains" from Galveston. I do see them from the Florida ports though. If I were to go to Florida, I would loose the bargain when I fly.
