Is there a technical definition that makes a boat a ship or is it just one of those you know one when you see one type of things?

Kuki's definition is pretty much what we used in the U.S. Navy. The exception being the submarines are called boats, probably because they used to be so small. Generally, a ship is self-sustaining for a reasonably long length of time while a boat isn't.
Does that mean an aircraft carrier is not a ship, they always have an escort

My father told me, "A boat fits on a ship. A ship cannot fit on a boat".
Of course, he also told me, "If it rains the first Sunday of the month, it will rain for 7 Sunday's in a row". Following that to it's logical conclusion, it should have rained every Sunday of my life. Think about it.
