Default It's a Catholic Thing

Am sailing on S/S Norway Sunday to Sunday. Do you know if they have Mass on departing Sunday, returing Sunday, or both?

Probably not. Usually embarkation does not start until the afternoon and disembarkation is very early on Sunday morning. You are probably better off attending mass Saturday evening at home or in Ft. Lauderdale if that works for your leaving schedule. When a cruise is Saturday to Saturday or longer and a priest may be traveling on board, he would offer mass and it would be in the bulletin and/or sometimes there is a non-denominational service, too.
