auto tipping help

I have never dealt with auto tipping so I need help understanding how it works with Carnival. Who's included in the tipping? Are you charged a tip for things like soda and tea? If you cancel auto tipping can you go ahead and designate staff tips right then so the staff knows and just pay drink tips as you go?

The automatic tipping includes your room steward, dining room waiter, his assistant, and the buffet staff. We paid $68 and change
per person last week on the Destiny. Bar tips are automatically added to the bill at time of service. I believe it was 15%. Soda would be included in that 15%, but tea is free. You can go to the Pursers Desk and have the Auto Tipping removed from your account (they have a breakdown of who gets what) and personally hand out tips. We added an extra tip to those who went out of their way to be of service. Hope this helps, and have a great trip.
