We booked an island tour with a local driver and it was the highlight of the cruise. He stopped by all of the island's sights (Diamond falls, botanical gardens, the Pitons, Soufriere, the volcano, etc...) and in addition bought us samples of local food & drink as we went along (fried fish with banana catsup, cookies, local bread, Piton Beer, Johnny cakes, etc...). He and his brother were informative, entertaining and more than worth the $40 per person charge for a six hour drive. If you are interested, post again and I can link you to his contact information.

There are quite a few highly recommended independent operators in St. Lucia. We went with Frank, but there is also Cosol, and Herod. If you post again, or send me a PM, I will give you a ling to them. It is a beautiful island, with such wonderful sights to see. Here is a link to my pictures for our trip there: http://community.webshots.com/album/549747081kImzLH
