It really depends on what you want in terms of onboard experience. Carnival will be more activity oriented than Celebrity with more pool games, louder music on deck and some group games you won't see on Celebrity. You will also have a more "fun" oriented dinner on Carnival with singing waiters and a nightly waiter dance. This can cause a bit of "less personalized" service than Celebrity and I find it an interruption more than a show.
In terms of the ship; there will be a different decor. Carnival ships are more "Las Vegas" in decor with the newer ships being less neon and glitz. Celebrity has a more "refined" look with a greater use of wood and is a little more subdued.
In terms of food, I don't think you will be disappointed in Carnival. Their food has become much better in recent years and IMO is close to Celebrity and better in terms of variety.
Standard cabin sizes will be larger on Carnival but the cabins are more "standard" in terms of design and use of wood tones and drawer space.
If you can handle a different interior design and the dinner show then Carnival would be a fine choice. Who knows, you may enjoy it.
