If you find one you won't get an accurate picture. Here is why; Take a Royal Caribbean ship, lets say Freedom of the Seas is sailing out of Port Canaveral, and you want to see how many cabins are sold; people booking in Europe won't see all the cabins available, and vice versa, you won't necessarily see all the cabins being sold to the europeans. Also, Royal Caribbean will hold back several different category of cabins too. You could check on Monday, and on Tuesday the numbers have changed either more available or less. There is not a good way to tell.

On the Carnival website, cruise search, you can go to a selected cruise, then proceed as if you are going to book the cruise. Select Balcony, Ocean View or Interior cabins and once the first price comes up select "edit" and see a drop down menu of available cabins. Go through the edit feature a few times to select various decks and cabin classes to see what is available.

Yes, you can do this on any cruise line's website. It still won't show all of the available cabins. I've never found a way to see all of the available cabins on any ship (and I don't think anyone else has, either ). This is "proprietary" information.
