Do you want to stay on Hong Kong Island or in Kowloon? Are you taking a cruise or just going for a visit? Are you looking for best price or best hotel? Do you want to go shopping, sightseeing, or just spending one night?
There are some wonderful hotels, just depends on what you're looking for.

I prefer Hong Kong Island (as a tourist) to Kowloon. I have stayed a couple of times at the Conrad and have really enjoyed the hotel amenities, service, and location. Others really prefer Kowloon with a view of Hong Kong Island such as the Intercontinental or Peninsula.
Hong Kong is a fantastic city for sight seeing, food, and shopping.
