Default picking shore excursions

I need some suggestions on shore excursions that would be fun for both my mother and myself. I'm taking my soon-to-be 60-year old mother on a December cruise to the Western Caribbean (Cozumel, Grand Caymens, and Ochos Rios). My mother has osteoarthritis in one of her knees, but she treats it with medication. She is a little afraid of the water (she almost drowned as a child). She wants to go sightseeing. I enjoy snorkeling, but the cruise is to celebrate her birthday so I want to pick things that will work for her, but I also want to have a good time. Any ideas? Thank you for your help.

Chankanaab Park in Cozumel was great. You can snorkel there right off the beach. They have a botanical garden, Mayan Ruin replica, a sea lion show, dolphins, restrooms, bars, restaurants, gift shops, showers, lockers, etc.. We had a great time there.

Try taking a tour with Phil Lafayette in Ocho Rios. He is wonderful and you really see a lot. I'm 57 with arthritis in both knees and tried climbing Dunn's River Falls because everyone said it was easy. It was not easy for someone with bad knees and I paid for a couple days after. You should see the falls because they are beautiful. In Grand Caymen we did Stingray City and I loved that. We also snorkled but they gave us life vest and even us water chickens had a great time. It's so beautiful. Feel free to e-mail me if you have more ???
