In St. Marteen we were supposed to do the Catamaran Tour up the shore and it was cancelled due to the wind. So we did the beach right at the base of the water taxi stop.
Friends of ours rented a car for the day that they were there and toured the island on their own.
St. Thomas we did Coki Beach and had a blast.
Stopped at the Paradise Point Sky Ride. Didn't feel that was worth the $.
Probably more to see and do but we were traveling with kids so the beach and water sports was key.
Good luck. Anything you decide to do should be fun, you are on the cruise.

In St Thomas we did the BOB excursion,you ride on motor scooters that go under water.They took us down about 20 feet and rode around the turtles.The scooter do not go fast and they have scuba divers down in the water with you,we really enjoyed it.they take six people at a time down.I recommend you look it up.
Carla, St. Thomas/St. Marteen are known for having gorgeous beaches, you don't need to spend all day at a beach, but you would be missing out if you didn't go to at least one beach. For St.Thomas i personally think that the most gorgeous beaches are over on St. John island. If you don't want to make the effort to get over there, then i would suggest Sapphire Beach on St. Thomas- it is beautiful. Spend a couple of hours on the beach, then go back to your stateroom, drop off your beach stuff, and then go walk around Havensight Mall. If you want to island tour St.Thomas simply hire a cab for a few hours.
St. Maarten - a really fun excursion is the Americas Cup Regatta - you race on a sailing sloop its a blast. For beaches on St.Maarten Orient Bay Beach is my favorite. Again if you want just hire a cab for a few hours, tour the island, make a beach/shopping stop.

Thanks for the help. We are really not water or beach people. I am sure my BF's mother will want to stop for a bit at one, she is a beach person I am sure after 30 minutes or so, my BF and I will probably leave the beach without them

We, too are looking for stuff to do there. Tho I would read up on Orient Beach. Grandma may or may not like the fact that it is clothing optional leaning towards totally nude. See here:
We also have done the BOBs in ST Thomas. Once in a lifeltime experience. I am not sure why you don't snorkel..but it took me 50 yeare to get the hang of the breathing thing without choking and getting a mouthful of water! While the BOB requires you go underwater..you are not hooked up to O2 through your mouth, just your "helmet"is . It is so cool!
FYI - regarding the America's Cup Regatta, you do not have to crew the boat if you do not want to, but most folks do get involved in it.
Have you considered the Champagne Catamaran SailAway in St. Thomas? this is a great excursion, its a beautiful sail boat, a beautiful sail over to St.John island, gorgeous, with beach & snorkel time, you can choose to stay on the boat if you don't want to swim or snorkel
