Went on Victory last year. It is a phenomonal ship. Remember it is huge so it will take a day or two to really get to know where things are and how to get there.
In Cozumel went to Playa Sol Beach Club. $19 which includes use of all non-motorized equipment and all you can drink. A lot of activities there. http://www.playasol.com.mx

In Cayman, I went on atlantis submarine and then took the ship's stingray sandbar tour. You must do the stingray tour.
In Ocho Rios did the San San yacht tour to Dunns Falls. Overpriced in my opinion but the upkeep on a luxury yacht is expensive. The Cool Runnings tour looked great and half the price. Dunns Falls is nice.
Sorry to say it but I was disappointed in my cruise on the VIctory... so much so that I exercised Carnival's Vacation Guarantee and got off the ship in Puerto Rico. We were on our honeymoon doing back-to-back cruises on the Explorer of the Seas and then the Victory. It was like going from a Mercedes to a Honda. The decor looked like a Motel 6 hand-me-down from the 80's even though the ship is not nearly that old. The service was often slow and sometimes downright RUDE! You can read more about it on my post on cruisecritic's Carnival site. Just do a search to find it. I will admit that the food (when we finally got it) was very tasty and our room steward was very good. The ship doesn't even allow you to go all the way from forward to aft on all the decks! Who designed this monster? I strongly suggest people to check out one of the RCCL Voyager class ships... then I dare anyof them to say that it's worse than the Victory. No chance. To top it all off, we actually paid MORE for the Victory than the Explorer. Luckily, we we re able to salvage the rest of our week and drove to Orlando. Lesson learned I guess. (And before you all try to flame me: NO, I do not have any hidden agenda here or am working for RCCL or anything stupid/paranoid like that... just stating my opinion.)
We sailed the Victory last January, loved it! It is huge, I still got lost halfway thru the week. Luckily my husband has a better sense of direction and the friendly crew were always willing to point me in the right direction..
We loved the glass bottom boat in Grand Cayman, Playa Sol Beach Club in Cozumel was fun. In Ocho we arranged our own tour before leaving home, you can get guide reccommendations on these boards if you put out a request, we put together our own package and didn't waste time or money on things that were of no interest to us. Have a wonderful trip. We are sailing the Conquest this January with our daughters, my parents and my brothers family. We just can't wait.
Do some cute shopping and stuff in cozumel !! Then go to Chakkanub National Park !! Its very coool .. lots of marine life sort of enlosed by rock formations .. its gorgeous and not a national park at all .. theres a bar hmm gee i wonder !! Its very fun anda great place to go for anyone !!
In cayman do some kind of snorkel tour/stinray city excursion ! I did one that did both it was great !! That was my favorite place !!
In Ochos Rios definately do a dunn river falls excursion .. do it earli-er in the morning ! Make sure to stop by jimmy buffet's margaritaville .. dont venture to far off .. Its not the nicest of places !
