Default Embarkation - San Juan

We will be cruising on the Jubilee in April. The ship doesn't leave until 10 PM but embarkation could begin shortly after noon.

Has anyone ever checked in and then left the ship to do a little sight seeing before the ship actually leaves? If so...how does it work?
