I would recommed the cities tourism sites. They usually have a "what to do here" section. Or try to find a message board just for those desinations. The tours that are not offered by the ship, obviously would be purchased just like if you were taking a land based trip to the destination.

We just took the elation with an 11 and 14 year old. See full review under Ship Reviews here. We went off on our own in Progresso, hired a private guide we found on cruise boards in Cozumel. But, took a Carnival excursion in Belize. As I have said on many posts, I highly recommend a Carnival excursion in Belize. You tender out at sea. Even with getting off "early" since we were on a Ship Excursion. The whole process took about 1.5 hours. Also, we were late arriving to the tender port in Belize, which wasn't a problem as we were with Carnival. We went during the Spring Break though and the cruise ship was packed.
