Daylight saving time April 2nd and Carnival ship time help!

We will be leaving Carnival Miracle from Tampa, and if I am correct, the Saturday night before sailing is when we "spring ahead" at least in Tampa.
SO--does the ship stay on local Tampa time?

Just wondering as we have set up a couple of private tours and they mentioned local time.
Can you tell me what time it will be compared to Tampa time when we arrive in:
Grand Caymen: I think ship should be one hour ahead of island time -this helps with getting a tender to shore on time
Cozumel: ??
Belize: ??
Costa Maya??

When we were on the Miracle last April she stayed on ship time (Tampa time) for the entire cruise. Grand Cayman, Cozumel and Costa Maya were all 1 hour behind ship time and Belize was two hours behind. I kept my watch on ship time and brought a cheap one that I kept in my backpack set for local time.
