We are leaving this saturday on Freedom. When I booked a month ago I told the TA, to make sure I get the lat ie 8 or 8.30 dinner seating. When reviewing the document I find that we have been given the 6.15 PM seating.
When I called Carnival they said to call the TA. TA called back and said they have requested it, but I have to go the purser and request it. It makes me think they did not do anything at all.
Will I be able to change the dinner seating to 8 PM???
From what I understand, you can request a change, but it all depends on how many people request the same seating time as you, so some people do not get their requested time.
Your Sail & Sign will tell you if you are the Chic or Posh Dining Room. Immediately after getting on the ship go see the Maitre 'd of your assigned dining room. The sooner you make the request the more likely you might get the time you want. If they cannot accomodate you on the first night go back the 2nd day and see if things may have changed.

From my experience, changing from early to late seating is 99% of the time not a problem, it is changing from a late to an early seating that is usually tricky.
As others have posted, when you board, read the Capers for the time when the Maitre d' will be available to addressing guest inquiries, go and ask him/her and btw, don't be too worried about going too early, there may be long lines and your request (changing from early to late seating) is one of the easier requests to accomodate. They'll actually be pleased that they have someone who is volunteering to give up an early seating.
What you tell the TA or Carnival directly regarding dining preference is simply a request. If you do not receive what you request, you can go to the Maitre 'd on the first day and see if he/she can accommodate your preference.
My girlfriend and I wanted a table for two on our cruise last week and were originally assigned a table for 8. We went to the Maitre 'd as soon as we boarded the ship and asked if it could be accommodated. He said he would see what he could do but to sit at our assigned table on the 1st night. We did so and on the next afternoon, we got a note in our cabin saying that he made the change for the table for two.
