In Cozumel ,over the last two Januarys, we did Excaret, which was a walk through live animal park and river tube ride... awesome!! We also did the Seegway/scuba swim tour, which completely trilled our 17 year old, we all loved that! In Belize, we've done Cave Tubing, after a 1 to 2 mile walk in the Belize mountain ranges. This will make your heart race if your going one way down this river while the group goes another. Are you headed towards a waterfall, who knows, because you're in complete darkness at times. You just know... they went thata way!! Just to spoil the mystery, I don't think that waterfall ever happens, but the cave really does have roots that can flatten that tube, hope you can swim/float with that life preserver. This was the third best excursion we've been on on of about twenty. Usually when the people come back from ATV/jeep events,all we see are folks covered in mud with the women rollin' the eyes.
You'll love the Grand Cayman option you've picked. I've swam with stingrays twice, they are supa~awesome animals.

How deep is the water? Should I bring our snorkel gear?

The second time (2006) I was there I did go to the Turtle Farm and Hell. The Turtle Farm was pretty cool. We even got to hold the babies and they were so sweet! Hell was interesting but just kind of a stop along the way. There isn't much there.
I fed stingrays the first time but not the second. You'd have to ask the tour operator about feeding them.
I'm guessing about 45 minutes to an hour was spent in the water.
The water at the sandbar is 3-5 feet depending on where you stand. If you want your own snorkel gear that is fine but they do provide it. No flippers though. And whenever you are in the water, plant your feet in the sand and shuffle, watching carefully where you go. You don't want to step on one!
It is crowded but it is so worth it. When I came home from my first cruise I got asked "did you see anything else?" because I talked about it so much!
