My understanding is that they are all baked onboard and not shipped in. For the most part the desserts are incredible. However, I have to say that my family and I all agree that anything with the word "sponge" in it is best avoided, my youngest daughter refers to them as the cardboard thingies with the icing on them.
My wife toured the Gally on our last cruise. Everything is freshly made, What amazed her most was how much food is used for one 7 day cruise. If I remember right it was something like 2 tons of prime rib, as an example, totally mind blowing!
DW also said that the gally, on the Valor, was huge but very clean and that someone works there 24 hours per day.
OHHHHH YES, bring on the Chocolate melting Cake, yummmmm.

The chocolate melting cake is available every night in the dining room. I think it is printed on the menu, but if not, ask your waiter. It's a tad too chocolatey for me, but DH has it with vanilla ice cream every night!

You may not be interested, but here's my two cents on sugar-free desserts - yes, I said sugar free. I've lost over 100 lbs. and I am determined not to gain it back. Cruised Ectasy in February and actually LOST 2 lbs. - all the walking, all the water, watched my food pretty carefully but not perfectly.
Anyway! Sugar free: orange cake, good; coconut cake, not good; tropical fruits and sugar free ice cream, very good; fat free yogurt, fine;
On the last night we were offered the Baked Alaska. Tasteless, save your calories. I indulged big time on last night - got the Choc. Amaretto Cake and split the Warm Choc. Melting Cake plate. Good memories.

I dont understand the huge attraction to the melting cake. Granted, it tastes ok usually but the way people go crazy for it puzzles me. I will try it once or maybe twice on a weeks cruise but not more than that. Ive had it overcooked and it tasted like a kids Easy Bake Oven cake.. to each his own of course..

We just renewed our vows (25th wedding ann) on the Miracle. Part of the price of renewal was making us a wedding cake to order. Got vanilla with strawberry filling. We had it for dessert in nick and nora's and shared it with everyone eating that night including two couples we conversed with while waiting in line to board the ship. Have to say it tasted great and we did get compliments from the other two couples saying how good it was.
That chocolate melting cake looked like a chocolate lover's delight, but I'm not much of a chocolate fan and am glad since I don't need any more pounds. My husband (diabetic) thought all the sugar free desserts were very good. I do remember having a cheesecake (sugar free) that was good. It simply had no crust (no carbs that way) and was made sugar free.
Plus with all that food who has room for dessert????
Over cooked cake melting cake is not good. It has to have the liquid center dripping into the vanilla ice cream to be good.
Lecx I also really liked the sugar free Orange cake. The worst sugar free dessert is the diet Pumkin Pie, three people at my table ordered it, only one actually ate it. It wasn't a real Pumpkin Pie, it was some kind of gelatin mix.

does anyone know whether you can order flourless chocolate cake? my dad absolutely loves it..he tried the melting chocolate cake and said the flourless was WAY better.. we are sailing in 3 weeks on the fantasy. if anyone knows please let me know =)

I absolutely love the orange spa cake, it is my favorite Carnival dessert....and I'm a chocoholic of the nth degree. I have to wait until the New Year's Eve cruise for my fix....did you know that you can find it, every day, at the Lido buffet line?
Its great to know there are options for diabetics or those watching their sugar intake. Thanks for the info, we'll be taking our first cruise in Feb 09 (Liberty) and my husband is diabetic so he'll be happy to hear he doesn't have to forgo any desserts!
The deserts are awesome. My wife has sugar d and we found several items that were sugar free, even at the buffett. Also, at the buffet they have ice cream on one side and frozen yougurt on the other. You will not be disappointed by the deserts.

13 more days and I will be eating all these desserts I have jsut read about. i love the different flavors of cheesecakes too. I dont have dessert that much at home so having it ont he cruises is such a treat. They are all very wonderful...........:-)
The best desert I had on my cruise was the one I made myself on the Mexican Cuisine Cooking Class shore excursion in Cozumel - Rice Pudding Tower. Pictured below.
Highly recommend this excursion, BTW, for those interested in improving their culinary skills. It was a blast!

My wife adn I LOVE Dole WHips at Disney but since that is the only place to get them I was wondering if there was a equvilent on a cruise?

“Almost Dole Whip” for Home
Fans even try to recreate the Dole Whip experience at home, a close-but-imperfect substitute. (Note: the home version uses dairy.) Of course, the home recipe is just to tide Disney, Dole-Whip-loving guests over until they can get their tongues on the real thing!
Ingredients
• 2 cans (20 oz.) DOLE® crushed pineapple
• 2 tbsp. lemon juice
• 2 tbsp. lime juice
• 1/3 cup sugar
• 1 1/2 cups heavy whipping cream, whipped
Directions
• Drain pineapple; reserve 2 tbsp. juice. Set aside.
• Place pineapple, lemon juice, lime juice, sugar and reserved pineapple juice in blender. Blend until smooth.
• Pour into two 1-quart freezer zip-locked bags. Store bags, flat, in freezer. Freeze 1 1/2 hours or until slushy.
• In large bowl, gently stir pineapple slush into whipped cream until slightly blended.
• Return to freezer until completely frozen (about 1 – 2 hours). Serve.

As to the original poster, yes, all desserst are made fresh on board, and for the most part, they are all good. My personal Carnival favourites are the Warm Chocolate Melting Cake, the Creme Brule, and the Grand Marnier Souffle.
Sometimes if I just can't handle a rich dessert, I'll ask for orange sherbert with a drizzle of chocolate sauce....mmmmm!
