It truly depends on what your family likes to do.
Each port usually has "the thing to do"....
Belize - "the thing to do" is cave-tubing. independent (cave-tubing.com)
Cozumel - "the thing to do" is swimming with the dolphins (ship excusion)
Roatan - "the thing to do" is ziplining with Victor Bodden (independent)
Costa Maya - "the thing to do" is the ruins. If your family is not into that...then there is a huge sea water pool at the port.
If you are looking for a beach day ....
Cozumel - with kids - Paradise Beach no question
It is a free beach resort - no entrance fees - no paying for the use of chairs, tables etc. CLEAN restrooms and changing rooms, outdoor shower also all free. They offer an OPTIONAL $10 wristband - the kids can get it but the parents do not have to- to use all their water/land toys.
A taxi to any beach resort will be $12 - 15 one way (depending on where you dock) and there are more taxis than sand...so don't worry about grabbing a taxi back to the ship.
Roatan - West End Beach - we were just there last month. It was ok...but not as entertaining as Cozumel's Paradise Beach. But you can take the water taxi from there to West End "town" area for $2 a person one way...if you get bored. In Roatan, the taxi driver "stays with you".
You will pay one price PER PERSON for the round trip. You simply tell them when and where to pick you back up. We have done this a couple of times without an issue.
Costa Maya - take the bus into town (the street is the beach)
Belize - we have been there about 4 times...but have never done the beach thing there...so I can't make any recommendations.
