7 Day Carnival Dream Cruise Info Needed

Hi,
I have never been on this cruise before and I need ideas for things to do with my family at the ports (I will have a 3 & 5 year old with my husband and I).
Here are the ports:
Cozumel
Belize
Mahogany Bay, Isla Roatan
Costa Maya, Mexico
We saw there are tours outside of Carnivals excursion company's. Not sure if that is a safe way to go since these are unknown countries for me.

I welcome positive and negative feedback on the ports as well.

Oh, btw, this is their Western Caribbean cruise out of Port Canaveral. FL
