We're cruising on the Millenium on 6/12. We've been hearing lots of great things about the Olympic restaurant. What would be the best night to dine there? And how do we make a reservation? Can we make a reservation before we board the ship?
Any night is a GREAT night to eat in the Olympic. Jacket and tie are required though.
Here's a link to the article I wrote after our "Olympic Experience".

Kuki is right -- any night would be great. When we sailed in February we booked right after boarding and we had to take what was left. I don't know how so many people booked ahead of us. (We boarded before noon!)
Any night is a good night to go to the Olympic, but we wanted to go on a night when the dress code was Informal anyway, because that is what the dress is everynight in the Olympic. I know one informal night was Wednesday because that is when we went, but I forget which other night was informal. Anyway, as soon as you get on board the ship, immediately ask where they are taking reservations for the Olympic. We were just on Mille in March and they were taking reservations in the Rendezvous Lounge, but things could change. We had no trouble getting reservations for the time and day we wanted, but we were on board around 11:30 am. Good luck, you will love it!
We called in our reservation as soon as we boarded. When there are 3 formal nights, the 2nd. night out is usually formal, so the 3rd. night would be a good choice. Schedule your reservation with the 3 hr. dining experience in mind. 7- 7:30 p.m. probably would work out well.
Bon Voyage
