Once on the boat go to the resturant and book there.
Yes there is a service fee to cover the resturant.
From what I hear - well worth it.

The food is past excellent and the service is fabulous.
The charge is $25 last I knew.
I can only speak from my experience on Millie, but the maitre d' of the main dining room may not be your man. On Millie, the Olympic people were set up on the OTHER side of the lounge and the lines were l-o-n-g. People were being given numbers.
We were lucky and had a butler so just let him handle the whole thing for us.
I recommend choosing an at-sea day so you are not exhausted from a day running around in port and wishing for a tuna sandwich and a nap.
