Caribbean Shore Excursions

As a bit of background, we are booked on the Century in late August and have sailed Celebrity 9 times. Has anyone had any really fantastic shore excursions in Ocho Rios, Grand Caymen, or Cozumel. We lean toward action excursions (ie. snorkeling or historical snooping) and not touring by bus for example. Has anyone attempted excursions pre-arranged, like through the Web, rather than through Celebrity?

Hello We are going on our first Cruise August 14 Century. After much research I have booked Stingray City and a reef snorkel trip with Capt. Marvin and Dolphin Swim at DolphinDiscovery in Cozumel. I still need to pick a excursion in Jamaica. We are 2 adults with adult children 18,23, 25. Any suggustions for Ochos Rios?
