Celebrity Constellation October 16 New England Cruise

Thanks to cruisermeg and others for tips on how to get from New York to the cruise port. Now we are looking for some more help.
1. Does anyone know the name and nationality of the chef on the Constellation.
2. We would like some suggestions about the shore excursions in Boston, Portland, Halifax, Quebec, Charlottetown, Sidney and Saint John. We are coming from California and unfortunately know very little about New England and eastern Canada.

I am from the Boston area...Fanueil Hall Marketplace, aka Quincy Market, is a nice take in close to the pier, as is the Aquarium....the swanboats, in Boaton Common, is good if you have kids....

In St Johns, we did the Bay of Fundy tour, and, shopped the area, by the port....a very friendly city....Have fun!

We did this trip on Connie in 2005. Boston we booked thru the ship the Walking Tour - it was well worth it, had a super guide, just did not need the Cheers/bar stop.
Quebec (we were there 2 days) easy to navigate on foot, upper and lower town, lovely place hope to get back there. We did the Montmorency Falls tour - I suggest doing that thru the ship as it is a long way there and back to the pier and public transportation (at that time) would not work for us. The ship waits for nobody - unless you are on one of their tours. We booked it the 2nd day we were in port there.

We actually left for our cruise on Oct 17 so the foliage was great.

Halifax - we did the fisherman's village, seen unbelievably large (very very big) boulders; went to the lighthouse, etc., lovely little town.
