In memory of Pamda--"Pam's Delicious Balls" Recipe
Hi all,
I lighted a candle for our dear friend Pam Kane tonight at our local church, but coming home, I felt the best way in which I could honor her memory for now and with her memorial Monday is post her *fantastic* Jack Daniels Balls recipe.
I cried when looking through the typewritten recipe, because Pam insisted on sending it to me when she left our house after staying 2 days ... her humor still comes through the recipe.
I made 'em that year, and I hope you will keep the recipe going ... as Pam told me, her mailman loved 'em (as does Andy). (And my dentist still asks about my "balls" each year -- Pam would love that.)
So, here is the recipe verbatim form the typewritten note from Pam:
"Now, the KILLER recipe from Hell. Surely to make you the most popular guy in the neighborhood. DO NOT give these to children."
Put in the food processor:
2-12-oz. packages Vanilla Wafers
2/3 cup Chocolate Cocoa (I use Hershey's, you can use Godiva)
2.75 cups sugar (plain old stuff again)
1 lbs. walnuts or pecans
Remove from processor and mix with:
2/3 cup light corn syrup (Karo)
1 cup Jack Daniels' whiskey or rum
Moosh around with your hands until it all sticks together. Roll into balls, then rolls the balls in powdered sugar. I haven't tried it, but rolling in Turbinado could be cool.
Make these about the day after Thanksgiving. Put in Tupperware or a tin. They must be closely covered so the booze blends.
Makes about 6 dozen balls.

Hi Harry, Thank you for printing the recipe, I have printed it out. I never knew Pam but she sounds like a special person. I can see that she was so loved by all the people on these boards. You were lucky to have been counted as her friend.

This recipe is every bit as yummy as Harry says ..... it's been a holiday favorite here, too. Pam loved to cook and she loved to share recipes......I think I will now tell one of my favorite Pamda stories:
SeaFan and Timberhead (vegetarians at that time) were going to be visiting Don and I......being a carnivore of the first order, I was in a panic. My first thought was to send out an SOS to Pam......SHE would have just the right recipe......and she DID! It was for a Vegetarian Lasagna. I shopped, assembled, baked and served........to my horror, a straw needed to be added to the flatware array. The flavor was wonderful.....but it was SOUP!!! We had a great laugh over it at the table......when finished we called Pam to tell her what had happened ....... and she replied....."Oh....did I forget to tell you to add a little flour ??? ....sometimes it can be runny .... MY BAD!!!"
On the Let's Get Lei'd cruise, I presented SeaFan and Timberhead with what has become to be known as their 'Formal Straws".... in a case, tied with a gold ribbon. I told them that I had shared Pam's recipe with Michele Roux and that they might come in handy .... We have ALL laughed about this culinary disaster many times over.

I too have tasted the famous rum balls - I would add this to the recipe: Serve them in a black cocktail dress.
Pam was certainly a "foodie", although she didn't eat very much. I could of followed her around just finishing up her plates, and gained weight! Queeg, remember the delicious nachos we shared in Playa? One for Pamda, three for me.

I've seen this recipe before and always thought, "mmmm, that sounds yummy." Now I'll definitely be trying it. This was a great idea, Harry, thanks for re-posting it.

Harry... excellent idea posting this. Now everyone can try Pam's Balls!
She and I spent alot of time talking when we were planning antics for the Let's Get Lei'd Cruise...and shared many laughs giggling over the stuff we would come up with.
In Hawaii at the pre cruise party she stared at me, wondering why I had little her to bring down 2 big boxes full of antlers, while BIG ole me, sat around drinking foo drinks. Of course, it was just a ploy to get her "mystery guests" in place to surprise her.
She did say she had been swearing at me as she tried to lug the boxes to the party... but she forgave me after the surprise was revealed<G>

I remember eating those nachos at the restaurant of second choice. The entire cruise Pam had extolled the virtues of the "BEST" margaritas in Playa at Don Pepe's with the bar shaped like a snake.
We had stayed a week in Playa not long before the RSMC and had scouted out all the best places. By the time we got ashore and raced to Don Pepe's......GONE!!!!!
Those were the good times. We will always have them to share.

They don't have to be made and eaten just in the holiday season, do they? They sound good enough to eat at any time. Make them now and decide if you want to share them or keep them all to yourself. I'm sure Pamda meant them to be shared with family and friends.

When Saturday Night Live did a parody of NPR and "Schwety Balls" I just had to send a notice off to Pam that they had "ripped off her schtick" (I think it originally aired before I met her, but who cares). She hadn't seen the show, but when she caught a re-run, she e-mailed me back, saying she pee-ed her pants. Now every time I see it on the Comedy Channel I think of her.....

I never knew Pam but she must have been a wonderful person to have so many great friends! Re making these without liquor-in most recipes you can substitute fruit juice for the liquor-OJ sounds good! Worth a try!

Good recipe! I am usually into strictly organic whole health foods only...but I will make an expection and try this recipe out for the holidays. A bite of that will enhance my quality of life, I am certain.

No, I wouldn't make them without liquor!!! But some people don't drink (see karessamom's post above ) so OJ would probably work. Not the same great effect, but sweet and orangy!
