Default Pam Kane's balls (hiccup)

Hi everyone,

Just want everyone to know I whipped up a batch of Pam Kane's infamous Jack Daniels balls about 2 weeks ago, and have been reaping the (hiccup) rewards for the last couple days (as well as my friends). (Although, I did substitute Jim Beam bourbon.)

I also included the recipe in my client Christmas cards this year as a tribute to Pam.

Neat story ... Pam mailed me the recipe a couple years ago after visiting here and when she saw I did a cookbook for clients that year.

This Christmas when I decided to include the recipe, I pulled out the recipe and her note that accompanied it. In her distinctive handwriting it read: "Maybe you will do a cookie cookbook next."

It felt so wonderful to do just that.

Any chance the Jim Beam is the culprit? [hiccup]

Would you if inclined post that recipe on the "Cruise Cuisine" forum? Would be a great tribute to Pam (Pamda). She is highly missed here on CM.

Since Harry is 3 hours behind us here on the east coast......here is Pamda's recipe .... this was one of the first of many that she shared with me over the years (we won't talk about the Vegetarian Lasagna where she omitted an ingredient and step {:-} oh the laughs we shared over THAT!) :

Pamda’s Bourbon Balls

Put in the food processor:

2-12-oz. packages Vanilla Wafers
2/3 cup Chocolate Cocoa (I use Hershey's, you can use Godiva)
2.75 cups sugar (plain old stuff again)
1 lbs. walnuts or pecans

Remove from processor and mix with:

2/3 cup light corn syrup (Karo)
1 cup Jack Daniels' whiskey or rum

Moosh around with your hands until it all sticks together. Roll into balls, then rolls the balls in powdered sugar. I haven't tried it, but rolling in Turbinado could be cool.

Make these about the day after Thanksgiving. Put in Tupperware or a tin. They must be closely covered so the booze blends.

Makes about 6 dozen balls.

Nice tribute Harry. I won't make any though, because I don't like bourbon and I can't eat nuts. Still, it's a nice way to remember an old friend.....

Donna - you don't like bourbon ! ?? Ugh...

I for one am raising several bourbon ball (sans balls) toasts to my dear friend and 'twin' Pamda !
