Default Pamda's Jack Daniels Balls

Well, it's the holiday season again, and one of our newer traditions is to whip up Pam Kane's great Jack Daniels Balls to share.

So, with fond remembrances of Pamda, I copy the recipe verbatim, as written by Pam.

Harry


Pamda's Bourbon Balls

Put in the food processor:

2-12-oz. packages Vanilla Wafers
2/3 cup Chocolate Cocoa (I use Hershey's, you can use Godiva)
2.75 cups sugar (plain old stuff again)
1 lbs. walnuts or pecans

Remove from processor and mix with:

2/3 cup light corn syrup (Karo)
1 cup Jack Daniels' whiskey or rum

Moosh around with your hands until it all sticks together. Roll into balls, then rolls the balls in powdered sugar. I haven't tried it, but rolling in Turbinado could be cool.

Make these about the day after Thanksgiving. Put in Tupperware or a tin. They must be closely covered so the booze blends.

Makes about 6 dozen balls.

I have heard just a little about Pamda, but I do know that she meant a lot to all of you. For those new comers. Someone please write what she meant to you. I would love to read it.

Luanne,
Sadly I never got to meet Pam in person but shared a wonderful email correspondance with her. She was very helpful to me in dealing with my dad and his dementia. She shared stories of nursing home experiences that let me know I wasn't alone. It was nice to have her to share tears and laughs with about the situation.
She invited my family to come visit as we were passing through Delaware and I remember thinking what an incredibly generous person to open her home to "strangers". Unfortunately it didn't work out at that time.
I feel very lucky to have known her even as I did.

You forgot to say "Keep out of the reach of children!"

I, too, never had the privilege of "meeting" Pam, but I have her books and the memories of those who did know her.

By the way, I usuallu sub in Jim Beam, so that works, too.

I, too, am gonna bring 'em to our neighborhood cookie exchange -- much easier than baking 3 dozen cookies.

I kept encouraging her to double the JD in it, but she wouldn't! Just like an 'older' twin, wouldn't do as I asked !

Pamda is missed by many. She was a good friend to those she met. She tried her best to keep CA in line, but we all know how difficult that was and IS.

I remember her fondly. She loved to call my husband a particular nickname. It always gave us a chuckle.

A WONDERFUL WOMAN!
