Default Chocolate Again--Flourless Chocolate Cake

I have a recipe for flourless chocolate cake similar to that which I have been served on many cruises.

If anyone is interested I will post it on this thread.

Nothing is bad if it is chocolate!!!!

This recipe is from the cooking section of the San Antonio Express.

1 12 oz package of semisweet chocolate chips

1 cup (2 sticks) of unsalted butter cut into pieces

1/2 cup water, 1/2 teaspoon instant coffee granules

1/2 cup cocoa, 1/2 cup sugar

8 large eggs, powdered sugar for dusting

Preheat oven to 375 degrees. Grease botton of 9 inch springform pan,cover with wax paper and grease wax paper. Put chocolate chips, butter, water and coffee granules in heavy duty saucepan. Heat over low
heat stirring until smooth. Add cocoa and sugar, stirring until smooth, and remove from heat.

Beat eggs in mixer for five minutes or until volume doubles. Gradually fold beaten eggs into chocolate mixture until thoroughly incorporated. Put batter into prepared pan and bake 35 to 37 minutes. The center will appear slightly underbaked.

Cool completely on wire rack, Cover and refrigerate for at least 4 hours. The cake can be prepared four days ahead. Remove cake from pan, first running knife around edge of cake.

Invert cake, remove pan bottom and wax parer, turn upright, dust with powdered sugar and serve with whipped cream if desired. makes 12 servings.

I was hoping for something I could substitute sugar with. Those chips wouldn't make it past my opening the bag. and i wonder why I am over weight....

I made the cake. It is very rich with a strong chocolate flavor and more like fudge than a brownie. It should probably be served with cream or ice cream, and the recipe does make at least 12 good servings. I know that it has been served at least once on every Carnival cruise I have been on.

With those ingredients, it probably has no carbs, if carbs matter to you.

Yep hence the name Flourless Choclate cake.

I do know that this is one good dessert, I sure hope that it turns out as good as it was on the Conquest in December.

Hey paul...don't suppose the article had any of the standard calories/carbs/cholesterol?

And even though it has no flour, the sugar carbs will get me. I wonder if substituting Carob chips for the chocolate would work....

Sorry, I had forgotten that sugar comes from plants and, thus, has carbs. Perhaps you could substitute salt chips and salt in the recipe!

Our daycare cook makes a flourless and egg-less chocolate cake for every kid's birthday, because we have so many allergies in our daycare. Aside from the fact we average at least 1 cake a week in each class, sometimes more, it is a really good cake!
