You guys had an easy one this time.
It was on Coco Cay and the ship was one of the Royal Caribbean ships. It was Sovereign of the Seas.
This cruise was a Wedding cruise for our Grand Daughter Heather. They were married on the Beach in the Sand at Jetty Park in Cape Canaveral. After the Wedding we all boarded the Sovereign for a short cruise and we visited Coco Cay on the cruise.
Here is proof of the Sand. Heather with her Husband and the Judge who happened to be the father of the Groom.

Wow, how romantic.
On my very first cruise, we sailed Royal Caribbean (nordic Empress) to Coco Cay, and I've never forgotten it!
