I should think that the QM2 would be something into which you might look for one simple reason. It is the last ship that will ever be built along the lines of the iconic Atlantic liner, meaning it has a re-enforced bow, something not necessarily needed but nevertheless an unseen feature providing a higher degree of security should the seas in some areas prove to be far more heavy than originally anticipated.
While obviously not on a par with the "Luxury lines" you have mentioned, were you to seek an upscale cabin (such as a suite) you may retain some of the amenities you seek. I understand that Oceana has the best food (even better by some reports than Seabourne, et. al.) but you would be afforded access to a restaurant(s) aboard QM2 denied to most of the passengers.
