if you want to join a cruise as cook, can you start directly as chef de partie, or do you have to start as a commis if you fit to the requirements ?

And how about the hours ?
They always say if you work as a cook on a cruise, you'll always have to do a lot of hours/day, so what are the average hours in a day ? 12h to 15h or 15 to 18h or more ?

If you have the relevant experience then you can join the ship as a CDP. For that position you'd want to be a very confident Chef, it's not easy. You'll work a minimum of 12 hours per day, not exceeding 14 hours(ILO). You'll have split shifts, so you'll usually have a break in the afternoon between 2-4pm. When you have USPH inspcection, expect late nights in the galley cleaning
