The best key lime pie you could make and eat outside of Key West! Enjoy this pie slowly and savor every bite it's that good.
1 - 9" shortbread cookie crust (or graham cracker if you can't find the shortbread)
1 - 14 oz can sweetened condensed milk
3 - eggs separated
1/2 c. key lime juice
1T sugar
Preheat over to 350.
Combine milk, egg yolks and key lime juice. You can add more juice if you like it tart just be sure to do a little at a time and taste. Whip the egg whites til stiff. Add the sugar. Pour filling into pie shell. Top with the meringe and bake for 15 minutes. Allow to stand for 10 minutes before refrigerating.
