Default pumpkin soup delicious!

Well, I took the advise of several folks on the board and ordered pumpkin soup on the Fantasy. Wow!! Hands down the best soup of ANY sort I've ever ordered!

My wife had Pumpkin Soup on the Paradise, she was surprised at how wonderful it was... unfortunately, I have tried several recipes to recreate it, and I still haven't mastered it.

By the way - if anyone finds a recipe for a Banana-rama Chilled Soup spiked with rum - yummy! We had it on the Radiance.

I just found this today and thought I'd make a note to ya'll...

Canival's home website, under "Gifts" shows that they sell a set of three cookbooks. Doesn't say what recipes are in it, though.

We were on the Mex. Riviera cruise on the Pride 04/11-04/18. My kids and I also loved the pumpkin soup. I asked our waiter for the recipe, and he brought it to us on the last night, saying "It serves 850 people, so good luck!"

Roasted Pumpkin Soup
(Serves 850 - 40 gallons)

35 gallons chicken stock
30 lbs. onion quarters
20 lbs. leeks, in chunks
4 lbs. whole garlic
3 qts. olive oil
6 gallons half and half
1 gallon heavy cream
2 lbs. chicken base
73 lbs. pumpkin puree
salt to taste
2 oz. black pepper

Roast onions, leeks and garlic cloves with olive oil in a preheated oven at 300 for 45-60 minutes. Puree.

Bring stock, pumpkin puree, pureed vegetables and chicken base to a boil. Simmer for 45 minutes.

Add half and half and simmer.

Season with salt and pepper.

Finish with cream

I plan to make this very soon, but will divide it by about 40!

This sounds very simular to a Butter Nut squash soup recipie i have that is to DIE for.--has nothing to do with cruiseing tho. It's made from butter nut squash, onion, chicken stock, and cream cheese. if you want it--e-mail me and i'll send you the recipie.

Okay... I was curious so I got out the calculators and modified the recipe to make just over 3/4 gallon (14 cups) of soup.

8 and 3/4 c. chicken stock
1 c. onion quarters
2/3 c. leeks, in chunks
2 cloves garlic

1/4 c. heavy cream
1 T. chicken base
2 c. (16 oz. can) plus 1/3 c. pumpkin puree
salt to taste

I agree the pumkin soup is wonderful! I looked the recipe up on foodnetwork.com and started playing with the ones listed. The best one, turned out to be a butternut squash recipe that is very simple. If you want it, let me know and I will post it.

I know this is a very old thread, but I love their pumpkin soup and wanted to make it.

Turns out in Europe, butternut squash is called butternut pumpkin. I'd be willing to wager that this pumpkin soup is actually butternut squash soup to us Americans!

Yup, just made the above with roasted butternut. Roasting temp is too low, bump to 400, but it's perfect otherwise! And even though scaling down, roast the garlic bulb whole in aluminum--not just the clove, or it will burn and taste bad.

I love the Pumpkin soup on Carnival! Both Carnival ships I've been on I have ordered it and it has been wonderful! On the Miracle in January I plan to get it again,

This recipie is for Butternut squash soup--haven't tasted carnival's yet but it sounds sort of like it and I know for a fact that this soups is really YUMMY!

Butternut Squash Soup

6 tsp. chopped Onion
4 Tbls butter
6 cups cubed butternut squash
4 cups chicken broth or 4 cups water and 4 tsp chicken base (or amount on chicken base for 4 cups water)
1/2 tsp. marjoram
1/4 tsp. black pepper
1/8 tsp. cayenne pepper
2 8 oz. packages cream cheese
sour cream (optional)

saute onions in butter, add squash, chicken broth, marjoram, pepper and cayenne. Bring to a boil. Cook 20 minutes or until squash is tender. puree squash in blender or food processor (I use blender) adding cream cheese until smooth. Return to pot and heat through. Don not allow to boil. Garnish with dollop of sour cream and if desired sprinkle with marjoram, cloves and nutmeg (very little) and or more cayenne if desired. any mixture of the above to your tastes.

I usually don't measure the onion and use more than it states. you can use amounts of seasonings to taste.

OK as other's have said--This isn't like Carnival's --I can't wait to taste carnivals version--however this is Still YUMMY--you might want to give it a try anyway.--if you think this receipie should be dumped because it's no where near Carnival's and/or totally unrelated to cruising--let me know and i'll deleate or any admin or monitor has my permission to deleate post. thanks

Hi Laura,

Either you have never had to grocery shop (lucky you! Or, most likely, you don't live in the US or Canada.

"Half and Half" is half cream and half milk. It usually comes in a pint or quart carton. It's richer than milk, but not as heavy as cream. Lots of people around here like to use it on cereal. I often substitute milk for "Half and Half" or cream in recipes, because I don't need the extra calories!

Are you making the pumpkin/squash soup? Let us know how it turns out!
