We do early.

What time do you eat at home?
Will you be doing lots of things in port and feel it will be a rush to get back to the ship for dinner?
How long does it take to get ready for dinner?

On some cruiselines the show is after dinner so if you take late seating it turns into a very late night.

that's just a few things to consider?

We always enjoy the late seating.
1. We have plenty of time to get ready, especially for formal night. Never have to rush back from ports in order to be ready for dinner.

2. The service is much more relaxed. There is not another group coming in after us, so servers are more laid back, do not rush us through dinner,e tc. There have been many nights where we wanted to linger over dessert and coffee with our new friends.

3. The evening show is at 10:30, meaning it is over just in time for the midnight buffets. For us, the late night is not a problem. Plus it meant that we could check out the buffet, but weren't tempted to gorge ourselves at midnight.

4. There seem to be fewer kids at this seating. We love children and hope to have some of our own one of these days, but I really enjoy eating without the kiddos. It really does seem to be a different atmosphere.

I'm sure whatever seating you choose will be great! Just consider what would best fit your lifestyle.

I prefer the late seating only if the shows are pre-dinner (as on RCCL's Voyager class ships). Show at 7pm or so and dinner immediately following.

If the shows are post-dinner only, then I prefer the early seating.

we're taking the later dinner on the conquest so we can have sushi appetizers before dinner. The sushi bar is only open certain hours and we're thinking if we fill up before early dinner we won't want to eat. This way will have time to digest and still be hungry for dinner.

I choose early, preferable 6:15, because that's when I eat at home; also, I can enjoy a late-night snack at the Gala Buffet if I'm still hungry. I also like the idea of early diners having the 8:30pm show, and late diners having the 10:30 show. (BTW, I've never felt rushed coming back from any port.) Basically, it's a personal decision. Enjoy!
