Also, once you finish your shore excursion at Nassau, can you walk around town a bit before returing to the ship? We would just like to meander a bit and see the town for an hour or so, nothing fancy.
Thanks for any help!

Providing your excursions ends before all aboard time you will be let off right where the shopping area is at. Nassau closes up early. Most shops are closed by 4 or5 p.m. If your excursion goes later and your morning is free, it is easy to walk off the ship, explore the town and get back in time to report for your excusrion.
I would do the Nassau Stingray excursion. Disneys is nice but much smaller area. For a true natural living effect, do Nassau.
CC's snorkeling is very good. Go way out by the sunken ship and look for the statue of Mickey. Most miss him.
The 2 bike paths are really nice and a good ride. One has a small observation tower, so bring your camera for photos. Be sure and look down around the tower, not just out over the island. They have some whimsical things to see that many people miss.
Even though you rent for an hour, they dont check you back in, so if your 10 or 15 minutes late nobody will notice. I am not saying to keep bikes all day but with kids it can take a bit over an hour to do both paths and it is ok.
Be sure and walk over to the grouper game room. The kids may like some of the stuff in there too.
To get the best picture of the Flying Dutchman either walk to or from the beach instead of taking the tram. Plus look in the navigator paper for the time Captain Jack will be near the Dutchman for photos. You must walk to the beach to do that too. The tram doesnt stop near him.
