Eastern Mediterranean - need help re: port excursions

We will be going in July with Costa Cruise, Fortuna through Eastern Mediterranean - stopping at Rhodes, Mykonos, Olympia, Santorini (Greech), Bari (Italy), Dubrovnik (Croatia). Can anyone help in terms of recommending their favorite excusions at any of these port? Any other pertinent/interesting info is very much appreciated.
