That is definitely the downtime for Disney Cruise Line since a lot of kids are newly back in school. There tends to be more adults then and more toddlers/pre-schoolers than older kids/teens on board then.

I don't know for sure, but I would expect that times when school is in session is less expensive than when school is out. We went during a popular winter break time - presidents weekend - and the cruise the following week was $800 less per person. I would expect that the time between thanksgiving and Xmass is probably not too expensive/crowded as well as the time right after the new year.
One way to tell is look at any of the cruise web sites or Disney's to see what the least expensive dates are for the trip you want. Just like on planes - the lines will lower the price to fill up the boat.
